Why our chilli cheese toast is non-negotiable
By Team Kaafi3 min read

Every café in India seems to have a dish that never leaves the menu. Not because it's fancy, but because the regulars would riot. Ours is the chilli cheese toast. When we were planning the menu, it was the first thing on the list and the only thing nobody argued about.
A café classic with history
Chilli cheese toast is a staple of Indian cafés, college canteens and Irani-style bakeries. It's simple: bread, cheese, green chillies, toasted until bubbling. Almost everyone has a memory attached to it: a rainy afternoon, a cutting chai on the side, a friend stealing the corner piece.
We didn't want to reinvent it. We just wanted to make the best version we could, using the things we'd been arguing about at home for years.
What goes into ours
The bread. We use thick-cut sourdough. It holds up under all that cheese without going soggy, and its slight tang cuts through the richness. Toasted right, the edges go crisp while the middle stays soft.
The cheese. Three of them, each with a job. One for sharpness, one for that long, stretchy pull and one for the nostalgic, melty creaminess that makes chilli cheese toast taste like chilli cheese toast. We grate them together so every bite gets a bit of everything.
The chilli. Fresh green chillies, finely chopped and mixed into the cheese, then a drizzle of our house chilli oil once it comes out. It's properly spicy but not punishing, with enough heat to make you reach for your coffee, not enough to ruin your afternoon.
The details that matter
The difference between a good toast and a great one is mostly patience. We spread the cheese right to the edges so there are no sad, bare corners. We toast it slowly, so the cheese melts all the way through before the top starts to brown. And we let it rest for half a minute before cutting, so the cheese doesn't slide straight off.
It comes to the table in four pieces, because it's meant to be shared. (It rarely is.)
What to pair it with
The obvious answer is a cutting chai, and we won't stop you. Our Masala Chai exists for exactly this reason. But try it with a Vietnamese Cold Brew: the sweet, creamy coffee against the salty, spicy toast is a combination our team orders every single shift.
If you're feeling generous, add a side of Peri Peri Fries for the table.
Non-negotiable
We change the menu with the seasons. Specials come and go, the V60 rotates every week and new bakes appear when our team gets inspired. But the Chilli Cheese Toast stays. Some things are too good to mess with.
